Caramelized Summer Squash & Sweet Onion

This is our favorite way to eat summer squash. It's simple but so delicious! Don't be shy with the butter, salt & pepper. And unlike most recipes, where I warn not to overcook the veggies, here you want to cook the squash and onions until they are very tender. They begin to caramelize and become very sweet!


1 medium to large or 2 small summer squash, thinly sliced

1 medium or 1/2 large sweet white onion, thinly sliced

1-2 tbsp. butter

sea salt

freshly ground black pepper


In a heavy skillet, melt butter over medium low heat. Add thinly sliced onions and summer squash. Sprinkle generously with sea salt & freshly ground black pepper. Cover pan with a lid.

Continue to cook over medium low heat. Lift lid and stir everything up every few minutes or so.

Once everything begins to soften nicely, and summer squash just starts to brown slightly, remove lid and stir well. Cook, stirring often, until all liquid is dissolved and summer squash and onions are very tender.

Serve and enjoy!
