Simple Sauteed Yellow Squash

1 large or 2 small summer squash, thinly sliced in rounds

2 tbsp butter

1/2 medium sweet onion, thinly sliced in rings

plenty of sea salt & freshly ground black pepper  


Melt butter in large skillet. Add onion and cook just till tender. Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften. Cover and continue cooking over low heat until nice and tender (about 5-10 minutes).

Remove lid and cook, stirring often, until liquid cooks off & squash is very tender, and just beginning to brown at the edges. Add plenty of sea salt & freshly ground black pepper.

Serve hot & enjoy!
