On hot summer nights, a cool supper is sometimes the best thing. Here is a tasty noodle salad with vegetables and an Asian dressing. Add cooked shrimp, chicken, or crispy seasoned tofu for some protein if desired!
This can also be made as a hot dish, by simply stir-frying the vegetables, dressing, and pasta for a few minutes on high heat and serve.
Ingredients:
DRESSING:
2 T. soy sauce
2 T. rice vinegar
1 T. toasted sesame oil
2 tsp. cane sugar
1/4 tsp. ground ginger or 3 tsp. fresh grated ginger
1 clove minced garlic, or 2 minced garlic scapes
VEGETABLES:
1 thinly sliced cucumber
3 thinly sliced scallions
1 c. sliced Napa cabbage, or coarsely shredded green cabbage
1-2 c. diced veg. such as carrots, radish, turnip, sweet pepper, etc.
PASTA;
1 12 oz. box capellini noodles, soba noodles, OR udon noodles
Instructions:
Cook pasta according to package directions. Meanwhile whisk together DRESSING ingredients in a large serving bowl. Add sliced vegetables and mix well. When pasta is done, drain and rinse well with cold water. Add to serving bowl and toss to coat.
Additional toppings: cooked shrimp, cooked chicken, seasoned tofu, crispy tofu, toasted sesame seeds, toasted seaweed (torn or cut into strips)Â
*For a hot dish, simply stir fry the vegetables, dressing, and pasta for 1 minute on high heat and serve hot.
