Lebanese Cabbage Slaw with Mint & Lemon

We love this very fresh and flavorful slaw, with the unique flavors of mint and lemon. You can add dill as well if you like. This pairs very well with fish, chicken and any Middle Eastern or Mediterranean dishes.
Ingredients:
1/2 large cabbage, shredded or thinly sliced
1/2 teaspoon salt
1–2 garlic cloves, finely minced
1/2 cup fresh parsley, chopped
mint - 1/4 cup fresh , chopped or 2 tsp. dried
dill - 1/4 cup fresh, chopped or 2 tsp. dried (optional)
3 tablespoons olive oil
3 tablespoons lemon juice, and more to taste
1/2 teaspoon sugar
1/4 cup very thinly sliced red onion, or 2 scallions chopped
Instructions:
Thinly slice or shred the cabbage and place in a large bowl with the salt. Toss. Add the red onion or scallions, garlic, herbs and toss again.
In small bowl, mix the olive oil, lemon juice and sugar and toss well. Taste and adjust lemon to your liking. Pour over slaw and mix well.
You could let this stand 10-15 minutes after tossing, and then re-taste, letting flavors meld a bit.
