Baked Acorn Squash with Apples

1 med. acorn squash

2 sm. apples, unpeeled, cored and diced

2 tbsp. diced celery

2 tsp. minced onion

2 tsp. butter, melted

2 tbsp. water

Cinnamon


Heat oven to 400 degrees. Cut squash in half. Remove seeds.

Place cut side down on greased baking sheet.

Combine apples, celery and onion. Add butter and water. Put in small baking dish. Cover.


Bake squash and apple stuffing for 45 minutes or until tender. Remove from oven.

Fill squash with apple mixture. Sprinkle with cinnamon and serve.

Yield: 2 servings. (Double recipe for more servings.)

*Optional alterations:

1) Add ½ lb. cooked bulk sausage, mild flavor such as breakfast or Italian sausage to stuffing mixture. (If buying links, simply remove sausage from casings.)

2)Partially bake squash. Remove from oven and add stuffing mixture. Return to oven and bake until squash and apples are tender.

3) Substitute delicata squash. Substitute butternut squash. After partially baking butternut, scoop out some squash to make a larger cavity for stuffing. Scooped squash can be added to stuffing mixture.
