Black Bean, Sweet Corn, and Tomato Salad (or Salsa)!

  • 1 can black beans, drained

  • 2 tomatoes, cored and diced

  • 1-2 cucumbers, diced

  • 1 small sweet onion or a few scallions, diced

  • 1 clove garlic, minced

  • sweet corn, cut off the cob (from 1-3 ears, as you like)

  • fresh lime juice from 1 lime, to taste

  • chopped fresh cilantro, a few tbsp.

  • salt and pepper to taste


  1. Mix all in large bowl and adjust seasonings to taste.

  2. Great for a light salad meal on a hot day, or with corn chips or warmed tortillas.
