Garlic Ginger Bok Choy Soup

Ingredients:

1 bunch scallions, or 1 leek, or 1/4 red onion, finely chopped

1 head bok choy, stems & leaves chopped

2 cloves garlic or 3-4 garlic scapes, minced

1-2 tbsp. fresh ginger, grated or minced

8 oz sliced mushrooms, like shiitake, crimini, oyster, etc.

2 tbsp. soy sauce or tamari soy sauce

6-8 oz noodles: udon, soba, rice or other quick-cooking noodles are all good options

5 cups broth: Chicken or Veggie broth

1 tbsp. olive oil


In soup pot, add olive oil, garlic & ginger. Cook over low heat, stirring, for a few minutes, until fragrant. Add mushrooms and saute for a few more minutes, until tender. Add broth & bring to boil. Add noodles & cook until almost tender. Reduce heat to low and add chopped bok choy and scallions and cook until greens are just wilted. Add soy sauce & season to taste.

Enjoy!

Other fun add-ons: toasted sesame oil, toasted sesame seeds, other veggies; cooked tofu, shrimp or chicken
