Homemade Potato Crisps

"his is a simple recipe I make often, as an appetizer or side dish. They are somewhere between oven fries and potato chips. It is hard not to eat them all as they come out of the oven."- Farmer Aimee


1 lb potatoes, gently scrubbed

2-3 tbsp. olive oil

½ - 1 tsp. sea salt

Optional seasonings:

Chipotle or chili powder, finely chopped oregano, garlic powder, etc.


Preheat oven to 400 degrees. Using a mandoline, or by hand, thinly slice potatoes (¼ inch slices). In bowl, toss with olive oil and sea salt and any optional seasonings. Spread potatoes in a single layer onto a preheated stoneware tray, such as a pizza stone, or if not available, a cookie sheet. Bake at 400 degrees for about 20 minutes, until potatoes are just beginning to brown at edges and slightly crispy. If using a cookie sheet, it is best to flip potatoes halfway through cooking. Add additional salt or seasoning to taste.
