Roasted Beets & Sweets (Sweet potatoes)

This is such a great combo of colors and flavors. It's great as a side dish, in wraps or tacos, in salads, etc. Have fun and enjoy!


Ingredients:


1 1/2 - 2 lbs sweet potatoes

1-1/2 lbs beets

1 teaspoon sea salt

1-2 tablespoon oil (I like olive oil, but you can use any mild oil here)

Optional seasoning:

  1. 1/2 tsp each garlic powder & onion powder

  2. 1/2 tsp each cumin, smoked paprika & chili powder


Instructions:


Preheat oven to 400 degrees.

Scrub sweet potatoes & beets. Peel beets and, if desired, sweet potatoes.

Chop up sweet potatoes and beets into bite size chunks, about 1" cubes. In a bowl, toss cubed roots with oil and optional seasonings.

Spread roots on a greased, rimmed baking sheet, or a parchment-lined baking sheet.

Bake 30- 40 minutes, until lightly browned, stirring halfway through.
