Lime Ginger Slaw

I had a tasty slaw like this at a restaurant, and re-created it here. Delicious - a tasty twist on traditional slaw!

Ingredients

  • 1 head Napa cabbage, thinly sliced OR 1 head green cabbage, shredded

  • 1/2 tsp salt

  • 1 tbs lime juice

  • 2 tbs olive oil

  • 1 tbs minced fresh ginger

  • 1 tbs honey

  • 2 tbs rice vinegar

  • Optional additions: grated carrot, radish, or apple, finely chopped scallions, cilantro, or parsley  (Add a few of these, but not all)

Instructions

Combine the cabbage, and any optional additions in a large bowl.

In a jar, mix the rest of the ingredients. Shake well to combine.

Pour the dressing over the cabbage mixture and mix well. Refrigerate for an hour before serving. If made with Napa cabbage, it will wilt a bit if you leave it in the refrigerator for a few days, but it still tastes great. When made with green cabbage, it keeps well for up to a week.
