Maple-glazed carrots

This is a farm-family favorite! One of the most simple & delicious ways to enjoy carrots.


1 bunch or 1 lb carrots

2 T. butter

1-2 T. maple syrup

pinch of sea salt


Wash carrots thoroughly. (Do not peel for maximum nutrition.) Slice thinly in rounds, or slice the long way in sticks.

Place butter in medium skillet. Melt over medium-low heat. Add carrots, stir and cover with a lid. Reduce heat to low and cook for about 5 minutes, stirring every so often, until carrots are just tender.

Cooking in a covered pan ensures the carrots steam in their own moisture.

When the carrots are nearly tender, remove the lid and add a pinch of sea salt and the maple syrup. Cook 1 minute more, stirring. Taste and adjust seasonings if needed. Serves 4.
