Maple Glazed Carrots

1 bunch carrots

2 T. butter

1-2 T. maple syrup

pinch of sea salt


Wash carrots thoroughly. (Do not peel for maximum nutrition.) Slice thinly in rounds. Place butter in medium skillet. Melt over medium heat. Add carrots and cover with a lid. Cook for about 5 minutes, stirring every so often, until carrots are just tender. Adjust heat as needed during cooking to ensure carrots do not stick. By cooking with the lid, the carrots should steam in their own moisture. When the carrots are nearly tender, remove the lid and add a pinch of sea salt and the maple syrup. Cook 1 minute more, stirring. Taste and adjust seasonings if needed. Serves 4.
