Napa Cabbage Slaw with Lime-Ginger dressing

A very refreshing twist on Coleslaw, this makes a great side dish, or a topping for fish tacos, burrito bowls, dumplings, etc.


Ingredients:


1/2 large Napa cabbage

1 medium carrot, grated

1 scallion, finely chopped, or 1/4 c. finely sliced red onion

A handful of fresh cilantro, chopped (optional)


Dressing:


1 teaspoon grated ginger

Juice of 1 lime

1 tablespoon of honey or granuated sugar

2 teaspoon sesame oil

1 tablespoon olive oil

1/2 tsp. sea salt or 1 tbsp. soy sauce


Directions:


Cut the cabbage half into two long quarters and then slice the leaves into thin shreds.

Combine the shredded cabbage with carrot, onions and cilantro.

Whisk the salad dressing ingredients in a bowl and pour over the salad. Toss thoroughly and serve.
