Southern style Swiss Chard

1 large bunch Swiss chard, roughly chopped, including stems

1-2 onions, finely diced

1-2 cloves garlic, minced (and/or minced garlic scapes)

2-3 tablespoons bacon fat, or olive oil

1-2 tablespoons apple cider vinegar

Method: In a large frying pan or pot, sauté onions in bacon fat or olive oil until tender and translucent. Add in garlic and cook over medium heat for about 1 minute.


Add Swiss chard and cook over medium-high heat until the greens are wilted and the stems are tender. Season liberally with black pepper and salt.


Mix in apple cider vinegar, starting with 1 tablespoon and increasing amount if desired.

Serve!
